If you make sourdough bread (or know someone who does) you may wonder what "discard" is used for. Well, you don't have to pitch it! Use it to make these good and filling pancakes.
- 3/4 c. discard
- 1 c buttermilk
- 1/2 c ricotta cheese
- 4 tbsp melted butter
- 2 eggs
- 1 large lemon zest and juice
- 2 c AP flour
- 3 tbsp sugar
- 1 tsp salt
- 2 tsp baking powder
- 1 tsp baking soda
- Whisk the wet together and whisk the dry together and add together, stirring until just mixed (leave the lumps).
- Drop onto hot (preferably cast-iron) skillet that has been reset to medium heat and greased.
- Wait until you see bubbling all over the top and then flip.
