This can make a good whole meal salad on a warm summer day!
- 1 lb cooked shrimp (peeled and deveined)
- 1 large cucumber, thinly sliced
- 1/4 red onion, finely diced
- 1/2 cup mayonnaise
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp fresh dill (chopped)
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1/2 cup cherry tomatoes (optional), halved
- Fresh parsley for garnish (optional)
- If you haven’t already, cook the shrimp by boiling or grilling them until they turn pink, then let them cool.
- Slice the shrimp into bite-sized pieces, or leave them whole depending on your preference.
- Slice the cucumber thinly, and finely dice the red onion.
- In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), fresh dill, and lemon juice. Season with salt and pepper to taste.
- In a large bowl, combine the shrimp, cucumber slices, red onion, and halved cherry tomatoes (if using). Pour the creamy dressing over the top and toss everything together gently.
- Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together. Garnish with fresh parsley before serving.
