Creamy Cucumber Shrimp Salad Recipe

This can make a good whole meal salad on a warm summer day!

  • 1 lb cooked shrimp (peeled and deveined)
  • 1 large cucumber, thinly sliced
  • 1/4 red onion, finely diced
  • 1/2 cup mayonnaise
  • 2 tbsp sour cream or Greek yogurt
  • 1 tbsp fresh dill (chopped)
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes (optional), halved
  • Fresh parsley for garnish (optional)

  1. If you haven’t already, cook the shrimp by boiling or grilling them until they turn pink, then let them cool. 
  2. Slice the shrimp into bite-sized pieces, or leave them whole depending on your preference.
  3. Slice the cucumber thinly, and finely dice the red onion.
  4. In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), fresh dill, and lemon juice. Season with salt and pepper to taste.
  5. In a large bowl, combine the shrimp, cucumber slices, red onion, and halved cherry tomatoes (if using). Pour the creamy dressing over the top and toss everything together gently.
  6. Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together. Garnish with fresh parsley before serving.
