Socca To Me, Baby!

For this you want VERY FINE chickpea flour. If all you have is regular grind, send it through your processor or Vitamix but make sure you don't do it TOO long or you'll get hummus- almost. Your pan will need to be well oiled (I recommend something that handles higher heat, NOT OLIVE OIL. 

  • 1.5 cups chickpea flour
  • 2 cups warm water
  • 1.5 tsp salt
  • 5 tbsp oil
  • fresh chopped rosemary
  • 1/4 inch  of oil

  1. Heat oven to 500 degrees.
  2. Soak flour in water. 
  3. Check for top foam and if there is any, remove it.
  4. Add salt, oil, rosemary and oil (5 tbsp)
  5. Allow to sit for 10 minutes.
  6. Add about 1/4" oil to a 10" cast iron skillet and heat until it just whisps smoke.
  7. As soon as you see whisps, add in the batter.
  8. Transfer to the oven and bake until browned.
  9. Serve immediately
