Salmon in Cilantro Sauce

This Low Carb, lower sodium, low/lower fat dish is easy to make and quite delicious. 

  • 3/4 c. EVOO
  • 2 cloves garlic
  • 1 small shallot
  • 2 tbsp lime juice 
  • 1 tsp cumin
  • 1/2 tsp salt (may omit)
  • 1/8 tsp pepper
  • 2 tbsp chopped cilantro

  1. Place all of the above in a processor except the chopped cilantro and process to where you want it.
  2. Add in cilantro and chill.
  3. Grill or pan cook or oven cook your fish to your liking and serve with the sauce on top.
For Three people you want 3 cuts, 4 oz thick Salmon or other thick cut filet.
