This is an authentic buttermilk pancake recipe. You can replace the sugar if you like with sugar replacement. These are very good and just like the original your mama made!
- 2 cups all-purpose flour
- 2 Tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp fine sea salt
- 2 cups low fat buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 3 Tbsp unsalted butter, melted
- 2 Tbsp Light olive oil or vegetable oil, plus more as needed to sauté
- Whisk the dry together
- Whisk the wet together
- Add the melted butter in at the end
- Stir but keep some lumps in.
