Peach Muffins

It's summertime and that means PEACHES! But you don't have to have fresh peaches for this recipe (though it would be awesome!) Frozen (defrosted) or even canned (drained) peaches

  • 1 1⁄2 cups flour
  • 3⁄4 teaspoon salt
  • 1⁄2 teaspoon baking soda
  • 1⁄2 cup sugar
  • 1⁄2 cup light brown sugar
  • 1⁄4 teaspoon cinnamon
  • 2 eggs, well beaten
  • 1⁄2 cup oil
  • 1⁄2 teaspoon vanilla
  • 1⁄4 cup chopped almonds (optional)
  • 1 1⁄4 cups chopped peaches

  1. Preheat the oven to 350. Lightly grease muffin tins or greased/floured 9" x5" bread loaf pan.
  2. In a large mixing bowl, combine the flour, salt, baking soda, sugars, and cinnamon.
  3. Make a well in the center; add the eggs, oil, and vanilla, and stir just until the dry mixture is moistened.
  4. Stir in almonds, if using them.
  5. Stir in the chopped peaches.
  6. Pour about 1/3 cup of batter into the muffin tins.
  7. Bake at 350 for 20-25 minutes or until toothpick tests are done.
  8. If baking in the loaf pan, bake at 350 for 1 hour or until done
