Traditional meatloaf always has a binder. Usually, its bread crumbs but crackers and torn-up bits of bread are also used. This recipe has no binder so its safer for diabetics and others who are lower carbs.
- 16 oz 90% Lean Ground Beef
- 1 cup Parmesan Cheese, grated
- ½ cup Onion, diced
- 1 Large Egg
- ¼ cup no sugar Ketchup for mixing with beef
- Mix the beef with the egg, cheese, onion and parmesan.
- Place in a loaf pan (I recommend using parchment to line).
- Bake at 350 for 1 hour or until reaches 165 in the middle.
- Remove from the oven and allow it to cool off for 10 minutes before removing from the pan.
