Make Your Own Hollandaise Sauce

 Usually a risky and delicate sauce. making it in the Vitamix allows you to make it safely and quickly! This has to be served IMMEDIATELY so save making it to the last minute:

  • 6 large egg yolks, pasteurized
  • 2 Tablespoons fresh lemon juice
  • ¼ teaspoon salt, optional
  • 3 drops hot sauce
  • 1 ½ cups unsalted butter, melted, warm

  1. Place the egg yolks, fresh lemon juice, salt, and hot sauce into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to Variable 8.  
  3. Blend for 30 seconds.
  4. Remove lid plug and slowly add melted butter in a thin steady stream, until mixture becomes thickened, approximately 55 seconds. 
  5. Serve immediately.
