This is made in your Instant Pot which makes it very easy! No need to dirty up the stove or pans. And this is very healthy!
- 1 tbsp EVOO
- 4 medium carrots, chopped
- 1 small onion, diced
- 1 tsp ground cumin
- 14.5 oz diced tomatoes
- 14.5 oz vegetable broth
- 1 cup dry lentils
- 1/4 tsp salt
- 1/8 tsp pepper
- 5 oz baby spinach
- 2 cups water
- Heat the oil and add carrots and onion
- Sautee 8-10 minutes until soft
- Add in the cumin to bloom
- Add in the diced tomatoes, broth, lentils, water, salt and pepper
- Cook in Instantpot crock cooking on high for 2 hours.
- Add spinach and cook another 15-20 minutes more.
