Lemon Lush
This is the essential Summer sweet! Lemony with lots of creaminess and so cool to eat- literally! It can be made as a pie or in a square pan for serving in squares. But however you do it, its one summery treat!
for the dough:
- 1 cup flour
- 1/2 cup chopped pecans
- 1 stick room temperature margarine
- Blend this together and press into a 9x13", lightly coated cake pan (I prefer to use a sling though- and highly recommend it!)
- Bake for 10 minutes at 350 and cool to room temperature.
For the Filling:
- 1 8oz cream cheese (may use lower fat)
- 1 cup powdered sugar
- 1cup cool whip
- Cream together well and pour over the cooled dough.
- For the Topping:
- 3 cups milk
- 2 packages of lemon instant pudding mix
- zest of 1 lemon plus juice of 1 lemon
- Mix together as per package instructions, adding a third box of pudding if need be
- Pour over the top and cover with more whipped cream
- Chill overnight.
