 Lemon Lush

This is the essential Summer sweet! Lemony with lots of creaminess and so cool to eat- literally! It can be made as a pie or in a square pan for serving in squares. But however you do it, its one summery treat!

for the dough:

• 1 cup flour
• 1/2 cup chopped pecans
• 1 stick room temperature margarine

1. Blend this together and press into a 9x13", lightly coated cake pan (I prefer to use a sling though- and highly recommend it!)
2. Bake for 10 minutes at 350 and cool to room temperature.

For the Filling: 

• 1 8oz cream cheese (may use lower fat)
• 1 cup powdered sugar
• 1cup cool whip

1. Cream together well and pour over the cooled dough.

• For the Topping:
• 3 cups milk
• 2 packages of lemon instant pudding mix
• zest of 1 lemon plus juice of 1 lemon

1. Mix together as per package instructions, adding a third box of pudding if need be
2. Pour over the top and cover with more whipped cream
3. Chill overnight.
