This requires only 30 minutes of prep time (if that) and very little babysitting time! The Instant pot has made

- 3/4 tbsp EVOO
- 1 lb boneless beef chuck cut into 1" pieces
- 1/2 tsp each dried rosemary, dried thyme, onion powder, salt
- 1/4 tsp smoked paprika
- 1/2 tbsp garlic powder, brown sugar, white flour, balsamic vinegar, tomato paste
- 1/8 cup dry red wine
- 1/2 cup beef broth
- 3/4 tbsp Worcestershire sauce
- 2 1/2 sprigs fresh rosemary and thyme
- 2 1/2 cloves garlic, minced
- 1/2 medium white onion
- 1 large celery stalk
- 2 large carrots, peeled and cut into 1 1/2" chunks
- 1 1/2 small russet potatoes cut into 1" chunks
- 4 oz sliced baby bella mushrooms
- 1/2 cup frozen peas
- Cut the beef into 1" cubes and put in a large bowl
- Mix the rosemary, pepper, thyme, onion powder, paprika, garlic, brown sugar, salt, and whole wheat (or oat) flour together in a bowl and sprinkle it over the beef and toss to coat.
- Turn the instant pot to saute and add in 1 tbsp olive oil and once it begins to smell warm, add 1/2 of the beef at a time and brown on both sides, repeating with the remaining half.
- Turn off the sautee and add the red wine, scraping the fond.
- Add the broth, Worcestershire, balsamic vinegar, and tomato paste to the pot and whisk.
- Make yourself an herb bundle by tying together rosemary and thyme and place into the liquid.
- Add the minced garlic, half the onion, and the beef.
- Turn the valve to seal and turn on manual >> high>> and set the timer for 20 minutes (be aware it could take 10 minutes to build pressure to start counting down from 20)
- When the timer goes off, use the quick release and let the steam out
- Open the pot remove the herb bundle and then add in the remaining onion, celery, carrots, potato, and mushrooms.
- Toss it all and return the lid, setting the seal valve to manual>>high and for 2 minutes more.
- When the timer goes off, flip quick relief and allow the steam to come out
- Open and immediately add the frozen peas and stir
- Allow the stew to sit for 5 minutes to thicken up before serving.
