Instant Chocolate Mousse

I don't recall my Mom ever making any Mousse. If she did, she called it something else. But I do recall when I first heard about the "Mousse".

The year was 1968 and the movie ROSEMARY'S BABY had just come out. I was thirteen at the time and some kids from school had decided to go see it in the local theatre. There was quite a bit of bruhaha over the movie and it's being shown. But as long as you were over twelve, they let you in.

I came to wish I had not gone. The movie wasn't so scary really until the very end when you got a brief glimpse of what Rosemary said and they all began that Hail Satan/Hail Rosemary stuff.

But there was this one woman, one of the wicked people, who kept bringing the star, Rosemary (played by the ever-so-underweight Mia Farrow) different concoctions to eat and drink and one some kind of chocolate Mousse. Only she didn't pronounce it "MOOSE" like it's supposed to be, no, she kept calling it a chocolate "Mouse" like the tiny vermin.

For the longest time, I really thought this confectionary was called Chocolate Mouse.

  • 1 cup heavy cream
  • 1/2 teaspoon King Arthur Pure Vanilla Extract
  • 1 tablespoon granulated sugar (you can use a replacement but check for sweetness!)
  • 3/4 cup King Arthur Sweet Ground Chocolate

  1. Stir together the cream and vanilla in a large bowl.
  2. Add the sugar and whip on high speed until medium peaks form.
  3. Fold in the ground chocolate, stirring until fully incorporated.
  4. Refrigerate, covered, until ready to serve.
  5. The mousse will keep in the refrigerator for up to 3 days.

Serves 6 at 190 cal each, 10 sat fat, 10 sodium and 13 carb
