Gougeres

 This is a fancy name for Cheese puffs. What I like about them is that they're easy to make and they can make a good, quick snack. You're making a choux and that's easy to do!

  • 1 cup water
  • 8 tbsp butter (cold and cut up)
  • 1 cup flour
  • 4 eggs (room temp)
  • 1/4 cup cheese, grated
  • dash salt if desired

  1. Heat the water on the stove to the boiling point and add in the butter to melt.
  2. Plop the flour in all at once and begin stirring over the heat to cook the flour.
  3. Remove to the stand mixer and beat to cool off to room temperature
  4. Add in one egg at a time, incorporating fully
  5. Add in the cheese and stir in
  6. You can pipe these or spoon them onto a baking sheet lined with parchment but make them uniform in size.
  7. Bake at 400 degrees until they rise and turn deep golden brown.
