These simple biscuits were always a favorite in Virginia homes. The first time I ever had them was on a visit to a farm with our school group. We got to eat lunch there and my goodness! These made quite an impression. And so simple to make!
Now, I have to let you in on a little secret. My Dad used to get Mill made biscuit mix from a grist Mill in Great Falls, VA and when he thought we didn't notice, he would occasionally make biscuits for us. One of his favorite things was scrapple and biscuits but he also liked biscuits and gravy, too. And it was Dad who taught me to make the worlds' best white gravy!
- 2 cups flour - unsifted
- 2 1/2 tsp baking powder
- 1/2 salt
- 5 tbsp cold butter
- 3/4 c. buttermilk plus 3 tbsp honey
- Mix all the dry together with a whisk.
- Cut in the butter and chill for 10 minutes.
- Add in the buttermilk/honey mixture.
- Turn out on to a lightly floured surface and roll to 1/2" thick.
- Bake at 400 for 12 minutes.
- BEST SERVED with jam and butter.
- If you want to, add about 2 tsp sugar to the dough and roll it out thinner and then use it as a kind of shortcake for strawberry shortcake!
