Diabetic Safe Brownies

 A couple of notes:

You will need VERY fine Almond Flour. This means either ordering it online or making your own. It's not difficult to do. Set out the amount of Almond flour you'll need to get to room temperature if you keep it in the fridge. Lightly scatter evenly on a tray lined with parchment paper. Preheat the oven to 250 and dry out (should take around 12 minutes tops; you could also use your dehydrator if you want to avoid browning but it will take longer). Cool well (do not refrigerate) and process in your food processor or (best option) your Vitamix until very flour-like. 

Now you're probably asking: why dehydrate or bake it? Because you need to dehydrate it or dry it out to turn it into flour without it becoming a nut butter when sent through the Vitamix. This is also why you need to let it cool to room temp. Getting the moisture or potential for moisture from being present, as it could turn the ground meal into nut butter.

  • 1 cup ultra-fine Almond flour
  • 1/4 cup cocoa powder plus 2 tbsp (total of 6 tbsp)
  • 3/4 cup 100% Allulose *
  • 2 eggs 
  • 1/3 cup coconut oil **
  • 3 tbsp warm water
  • 1 tsp vanilla or coffee extract
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 cup Stevia Chocolate Chips (divided)
  • 1/2 cup pecans (toasting is optional) chopped (divided)

  1. Preheat the oven to 350.
  2. Make a parchment sling for an 8" x 8" pan 
  3. Stir everything together in the bowl EXCEPT for half of the chips and half of the nuts.
  4. Pour into the lightly sprayed sling
  5. Top with chips and nuts
  6. Bake for 25-35 minutes until done in the center.
  7. Allow to cool in the pan before lifting out and cutting.

*Allulose is a fairly new product that more closely mimics sugar than does Stevia. But like Stevia, it can cause gut issues in some people. It is an actual sugar- a rare sugar- found in certain plants. Some countries have banned it as a potential carcinogen but those have been rat studies and is only dangerous if consumed in large quantities. It is considered safe by the FDA. The major benefit is that is has 0 effect on blood sugar. I suggest MONKFRUIT but if you're not using the 1:1 type, you'll want to add by tbsps at a time, tasting as you go.

**When using coconut oil, make sure to use a good quality and get it in solid form as its less expensive than liquid form. Simply warm it in the microwave. It melts quickly so watch carefully and add only after it cools back down.
