These would be great as a lunch for the kiddoes with maybe a side of mac n cheese or some homemade fries.
FOR FOUR
- 1 cup cornflake crumbs
- 1/2 cup reduced-fat pancake and baking mix
- 1/2 teaspoon paprika
- 3/4 pound boneless, skinless chicken breast halves, cut into 1-inch pieces
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
- Preheat oven to 400 degrees F.
- Line a baking sheet with foil and coat with cooking spray.
- In a large resealable plastic bag, mix together cornflake crumbs, baking mix, garlic powder, salt, pepper, and paprika.
- Add chicken pieces and shake to coat.
- Place on prepared baking sheet.
- Spray chicken with cooking spray.
- Bake 12 to 15 minutes, or until chicken is no longer pink.
- Serve immediately.
