Crispy Pickle Wonton Bites

 [for four people] This is actually an appetizer but would be great for a finger food meal!

  • 3 tbsp. dill pickle chips, patted dry, finely chopped
  • 2 tbsp. whipped cream cheese
  • 2 tbsp. light/low-fat ricotta cheese
  • 1 tsp. chopped fresh dill
  • 1/8 tsp. garlic powder
  • 8 wonton wrappers

  1. In a medium bowl, combine all ingredients except wonton wrappers. 
  2. Mix well.
  3. Top one wrapper with 1/8 of the filling (about 2 tsp.)
  4. Moisten the edges with water, and fold the wrapper in half, enclosing the filling.
  5.  Press firmly on the edges to seal. 
  6. Repeat to make seven more wonton bites.
  7. Spray an air fryer with non-aerosol nonstick spray. 
  8. Place wonton bites in the air fryer, and spray with nonstick spray.
  9. Set the air fryer to 370ºF. 
  10. Cook until golden brown and crispy, about 4 minutes.

[note: if you don't have an air fryer, you can bake them at the same heat and time after spraying both sides with oil OR if you prefer fried, on a very low heat, fry each side in a small amount of oil]
