Classic Lemon Bars

I love a good lemon bar! I know. I know. You can buy the kit. But kits aren't quite the same and definitely aren't a challenge. This is a from scratch recipe that's pretty easy to make and really, really lemony good.

Bake at 350 in a 9 x 13 inch pan  👈VERY IMPORTANT!

Crust

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 2/3 cup confectioners sugar
  • 12 tbsp unsalted, melted and cooled butter

  1. Whisk together the flour, salt and confectioner sugar.
  2. Add the melted butter and press into the pan. 
  3. Bake for around 20 minutes but do not let it turn dark.
  4.  Remove and cool.

Filling

Combine zest of 3 lemons and 3 cups of sugar in a processor and whizz until the sugar is pastel yellow. Set aside.

  • 1 cup fresh lemon juice
  • 1/2 cup flour
  • 8 large room-temperature eggs

  1. Place sugar in a large bowl with the flour and whisk to combine.
  2. Combine lemon juice with the eggs, whisk together.
  3. Add the egg and lemon mixture to the sugar, flour mixture.
  4. Place in a 350 degree oven for 25 minutes until it's a little jiggly but not loose.
  5. Let it set until cool and chill in the fridge overnight is best. 
  6. Cut and serve.
