Celery Root Mashed Potatoes

Also called Celeriac, celery root makes a very good substitute for mashed potatoes except its kind of sweet so the 1/4 cup of dried potatoes helps elevate it to more of a potato flavor. You could leave it out if you prefer but I like it in. No, its not a pretty veggie but it sure is good! And the carb count is much lower than white potatoes.

  • 1 large celery root
  • 1/4 cup almond milk
  • 1/4 cup dry mashed potatoes
  • salt and pepper to taste.

  1. Peel the celery root and cut into 1" pieces
  2. Wash and boil in water until fork tender
  3. Cool to where you can touch without burning
  4. Place in a cheesecloth and squeeze out excess water
  5. Put in a large pot and mash using either your hand mixer or a hand masher
  6. Add in the dry mashed potatoes, salt and pepper
  7. add in the milk (a few tbsps at a time) until you reach the desired consistency.
  8. Warm up and serve
