Also called Celeriac, celery root makes a very good substitute for mashed potatoes except its kind of sweet so the 1/4 cup of dried potatoes helps elevate it to more of a potato flavor. You could leave it out if you prefer but I like it in. No, its not a pretty veggie but it sure is good! And the carb count is much lower than white potatoes.
- 1 large celery root
- 1/4 cup almond milk
- 1/4 cup dry mashed potatoes
- salt and pepper to taste.
- Peel the celery root and cut into 1" pieces
- Wash and boil in water until fork tender
- Cool to where you can touch without burning
- Place in a cheesecloth and squeeze out excess water
- Put in a large pot and mash using either your hand mixer or a hand masher
- Add in the dry mashed potatoes, salt and pepper
- add in the milk (a few tbsps at a time) until you reach the desired consistency.
- Warm up and serve
