Brown Sugar Cookies

the little guy is swallowing a huge piece of the
softest brown sugar cookie!
 These are some of my favorite cookies to make! When white sugar wasn't as available, homemakers used their dark brown sugar to make some excellent cookies. Try these for a treat in the fall, too. They have a molasses-like flavor, only lighter.

  • 1 c unsalted butter, melted and cooled
  • 1 3/4 c tightly packed brown sugar (dark is best)
  • 1 large egg + 1 yolk
  • 1 1/2 tsp vanilla extract
  • 2 3/4 cups all-purpose flour 
  • 1 tbsp cornstarch
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp salt

  1. Mix butter and sugar together
  2. Add the egg
  3. add the extract
  4. whisk together the remaining ingredients
  5. Chill for 30 minutes to 1 hour.
  6. Set oven to 30 and roll the dough into balls and then into coarse sugar
  7. Bake for 8-9 minutes and allow to cool on the sheet.
