Can you add other flavors? Of course! Put in some cinnamon. Add in some small, chopped nuts if you like. Or maybe even add some sweetened pineapple flakes for a more tropical approach. And of course, you could always frost them.
However you want to serve them, they're always a hit!
- 2 medium ripe bananas
- 1 egg
- 1 tsp active dry yeast
- 2 tbsp melted butter
- 1/2 tsp salt
- 2 cups of AP flour (or bread flour) plus 1/3 for rolling out
- 1/2 cup raisins or currants
- Smash up the bananas very well.
- Add in the egg and cooled butter
- Add together the yeast, salt, and flour (sifting)
- Add the dry to the wet in 1/2 increments, mixing well until no flour is visible
- Cover and allow to rise for 30 minutes.
- Scoop onto a well-floured board and knead into a soft but stiff ball.
- Place in a lightly greased bowl, turning to coat.
- Cover with plastic and allow to rise until doubled.
- Pour out and knead in the raisins.
- Shape into a circle about 2" high and cut into 16 wedges
- Shape into 16 balls and place in an oiled pan or one lined with paper.
- Proof again to double.
- Shake top with confectioner sugar and bake at 375 for 15-20 minutes.
