This is a sweet but healthy muffin with enough chocolate to get any chocoholic over the hump!
- 1 large egg
- ½ cup unsweetened applesauce
- 1 cup bananas, mashed (about 2-½ medium bananas)
- 2 Tbsp. honey
- ½ cup coconut flour
- 1-½ cups almond flour
- ¼ cup unsweetened almond milk
- ¼ tsp. vanilla extract
- 2 tsp. baking powder
- 3 Tbsp. dark chocolate chips
- Preheat oven to 350 degrees F. Place paper liners in muffin tin wells.
- In large bowl, combine all ingredients and mix until smooth.
- Portion batter evenly into liners and bake for 20 minutes.
- Let cool completely before serving
