- 1 large boneless, skinless turkey breast, halved
- 2 tbsp melted coconut oil
- 2 tbsp dried parsley
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 c white wine
- 1 c sliced fresh mushrooms
- 2 tbsp cornstarch
- 1/4 c cold water
- Place turkey in the slow cooker
- Brush with coconut oil
- Mix together the parsley, oregano, salt, pepper, and wine, and pour over the turkey
- Top with the mushrooms
- Cover and cook on low for 7-8 hours or until just tender
- Remove and keep warm
- Skim any fat from juices
- In a saucepan over low heat, combine cornstarch and water and mix until smooth.
- Gradually add in the juices from the crock.
- Bring to a boil.
- Cook and stir for 2 minutes, until thickened
- Slice turkey and serve with the sauce.
