Nantucket Cranberry Pie

Fall brings with it the enjoyment of the cranberry! But cranberries aren't just for jell! They're great in a pie too and this Nantucket pie will become a favorite.

The Filling:

  • 2 cups frozen cranberries
  • 1/2 cup sugar
  • 1/2 cup chopped pecans

  1. Mix together in a bowl.
  2. Pour into a 10" pie pan (if using glass, lightly grease)

The Topping

  • 3/4 cups softened butter
  • 1 cup sugar
  • 2 eggs 
  • 1 tsp almond extract
  • 1 cup all purpose flour
  1. Combine the butter and sugar and beat until smooth
  2. Add eggs, extract and beat until fluffy
  3. Add flour and beat again.
  4. Spoon or pour over the cranberries & smooth the top
  5. Place in a 350 degree oven for 45-50 minutes
(for a 9" pan add 10 more minutes to bake)
You can sprinkle to top with sugar for extra glisten!
