Fall brings with it the enjoyment of the cranberry! But cranberries aren't just for jell! They're great in a pie too and this Nantucket pie will become a favorite.
The Filling:
- 2 cups frozen cranberries
- 1/2 cup sugar
- 1/2 cup chopped pecans
- Mix together in a bowl.
- Pour into a 10" pie pan (if using glass, lightly grease)
The Topping
- 3/4 cups softened butter
- 1 cup sugar
- 2 eggs
- 1 tsp almond extract
- 1 cup all purpose flour
- Combine the butter and sugar and beat until smooth
- Add eggs, extract and beat until fluffy
- Add flour and beat again.
- Spoon or pour over the cranberries & smooth the top
- Place in a 350 degree oven for 45-50 minutes
(for a 9" pan add 10 more minutes to bake)
You can sprinkle to top with sugar for extra glisten!
