Pumpkin Spice Granola
- 4 cups old fashioned oats
- 1 cup raw pumpkin seeds or pepitas
- 1 cup canned pumpkin
- 1/2 cup splenda for baking brown sugar
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 2 tbsp water
- 2 tsp ground cinnamon
- 3/4 tsp salt, ginger, and nutmeg
- 1/4 tsp ground cloves
- Preheat oven to 325.
- In a large bowl, combine oats and pumpkin seeds
- In a small saucepan whick the remaining ingredients
- bring to a boil
- Remove from heat
- Pour over oats and seed mixture
- Toss to coat
- Spread evently oh a sheet pan covered with parchment paper
- Bake 40-50 minutes or til golden, stirring every 10 minutes
- Cool completely on a wire rack
- Break if needed and store in an airtight container
