Pumpkin Spice Granola

  • 4 cups old fashioned oats
  • 1 cup raw pumpkin seeds or pepitas
  • 1 cup canned pumpkin
  • 1/2 cup splenda for baking brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 tbsp water
  • 2 tsp ground cinnamon
  • 3/4 tsp salt, ginger, and nutmeg
  • 1/4 tsp ground cloves

  1. Preheat oven to 325.
  2. In a large bowl, combine oats and pumpkin seeds
  3. In a small saucepan whick the remaining ingredients
  4. bring to a boil
  5. Remove from heat
  6. Pour over oats and seed mixture
  7. Toss to coat
  8. Spread evently oh a sheet pan covered with parchment paper
  9. Bake 40-50 minutes or til golden, stirring every 10 minutes
  10. Cool completely on a wire rack
  11. Break if needed and store in an airtight container
