(serves four)
This is a very healthy alternative to thick pasta sauces but it's not just for pasta! You can serve it over rice or even some crusty bread.
- 2 tsp olive oil
- 1 finely chopped onion
- 1 tsp crushed garlic
- 1/4 cup tomato paste
- 1 tsp sugar (or stevia)
- 14 oz can diced tomatoes (no salt added)
- 1 lb ground beef (or turkey)
- 8 and 3/4 oz dry spaghetti
- Sautee the meat until brown and pour off the fat.
- Sautee the garlic, onion
- Put in the tomato paste and cook down until it darkens.
- Add in the diced tomatoes, stevia or sugar, and ground beef
- While the sauce is simmering, cook the spaghetti to al dente.
- Serve sauce over the noodles.
