For me, Waldorf Salad reminds me of the Mother-Daughter luncheons we had at church once a year. It was a good time. We all dressed up, there were linens and dishes and everything elegant decorating the cultural hall at the church. And we had waiters- mostly the boys in the church. We sang with our Moms and each one of us was given a rose.
And, we ate Waldorf Salad because it, with tea crackers, was considered ladylike and elegant for lunch.
- 1 cup chopped granny smith apples
- 1 tbsp lemon juice (fresh)
- 1 cup finely sliced celery
- 1/4 cup light mayonnaise
- 1/4 cup golden raisins (may sub with red grapes, sliced in quarters)
- 1/4 cup chopped walnut
- 1 cup chopped cooked chicken or turkey
- Sprinkle lemon on the apples and whisk with mayonnaise, celery, and raisins.
- Toss in the chicken.
- Toss in a large bowl and top with the walnuts.
Serve immediately
