Dad Clarke's Saturday Morning Pancakes

Saturday morning. Nobody had to get up for work. Nobody had to get up for school. We all slept in.

In our house, the television didn't go on until after breakfast. Mom and Dad didn't want us to be babysat by the "one-eyed monster" as they called it, while they slept in. So we were reminded to have a book to read while we waited to be called downstairs. And nobody was called downstairs until breakfast.

Both of my parents loved to make pancakes. Mom made the fluffy kind. She called them German pancakes. Dad preferred the traditional pancakes. I liked Dads better (no offense to Mom). They just seemed more "kid-friendly" and, to be honest, they were dense and kept you filled longer.

Dad's recipe is very simple:

  • 2 cups flour
  • 3 tbsp sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 1/2 cups milk
  • 1/2 tsp vanilla extract

  1. Whisk the dry ingredients together.
  2. Whisk the wet ingredients together.
  3. Add the two together but LEAVE LUMPS! YOU WANT DEM LUMPS!
  4. Allow it to sit for 10 minutes before using.
