Creamy Coleslaw

Coleslaw is a beachside favorite for those of us who love our seafood! But it can be fattening, even though it does have cabbage! Well, I like mine creamy but colorful so here's my own variation. 

Makes 6 servings, about 3/4 cup each 

  • 3 tablespoons reduced-fat mayonnaise 
  • 3 tablespoons nonfat plain yogurt 
  • 1 tablespoon Dijon mustard 
  • 2 teaspoons cider vinegar 
  • 1 teaspoon sugar 
  • ½ teaspoon caraway seed or celery seed (optional) 
  • Salt and freshly ground pepper, to taste 
  • 2 cups shredded red cabbage (1/4 of a small head) 
  • 2 cups shredded green cabbage (1/4 of a small head) 
  • 1 cup grated carrots (2 medium) 

  1. Combine mayonnaise, yogurt, mustard, vinegar, and sugar in a large bowl. 
  2. If desired, add caraway seed (or celery seed). 
  3. Season with salt and pepper. 
  4. Add cabbage and carrots and toss well. 

Calories - 48 cal 

NOTE: you can make a standard cole slaw by just using 4 cups of DOLE angel hair cole slaw mix and omitting the red cabbage.
