Cilantro-Lime Rice

 An easy side dish, this is Martha Stewart's version amended for a stronger flavor. The first time I had cilantro-lime rice I knew it would be a favorite of mine and indeed it is. 

  • 1 cup long-grain white rice
  • Coarse salt to taste or omit if loso
  • 1/2 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 garlic clove

  1. In a medium saucepan, bring 1 1/2 cups water to a boil. 
  2. Add rice and 1/4 teaspoon salt; cover, and reduce to a simmer. 
  3. Cook until water is absorbed and rice is just tender, 16 to 18 minutes.
  4. Meanwhile, in a blender, combine cilantro, lime juice, oil, garlic, and 2 tablespoons water; 
  5. Blend until smooth. 
  6. Stir into cooked rice, and fluff with a fork.
