Burger Buddy

 A 1950s favorite, Burger Buddy made its way to our dinner table from time to time. Of course, the original didn't take into special consideration for those who had dietary restrictions, and those will be included here. 

  • 3 crushed garlic cloves
  • 2 medium carrots, shredded
  • 10 oz small white mushrooms (whole or sliced)
  • 1 large shredded onion
  • 1 lb 90/10 ground beef
  • 2 tsp dry thyme
  • 3/4 tsp salt (omitted for loso)
  • 2 cups uncooked elbow macaroni (for lower carb, try ZENB)
  • 2 cups water
  • 14 oz can beef broth (use unsalted)
  • 2 tbsp Worcestershire sauce
  • 2 tbsp flour
  • 1/2 cup reduced-fat sour cream

  1. Shred up your garlic, carrots, and mushrooms, processed very finely.
  2. Add onions and pulse to a rough chop.
  3. Brown the meat and stir in the chopped veggies.
  4. Season with salt and pepper.
  5. Stir in 1.5 cups beef broth, all of the water, and dry noodles.
  6. Boil, cover, and reduce to simmer, stirring occasionally until pasta is tender.
  7. Stir in the remaining 1/4 cup broth.
  8. Stir in the slurry and stir until thick.
  9. Add sour cream right before serving.
