In bad times or good times, soup sustained you but you had to be creative to make it taste good. My Mom relates that canned soups were more common in the home, mostly because it couldn't be used by the military fighting in the field. "We ate a lot of homemade soup and canned," she said. "I didn't like tomato soup but if it was what was served at the boarding house, it was what I ate!"
- 2 onions
- 1/4 c butter
- 2 cans cream of tomato soup (I recommend using Campbell No Salt Tomato Soup)
- 6 cups water
- 2/3 cups rice
- 2 sprigs chopped parsley
- 2 stalks chopped celery
- 2 tsp salt
- pepper to taste
Put everything in the pot and cook covered for 30 minutes.
What to serve with it?
A nice half sandwich or a salad would be good!
