Stuffed Mushroom Caps

 Normally an appetizer I would use them as a side dish or finger-food lunch as well. This serves 12 people for 1 each.

  • 12 large button mushrooms
  • 1/4 cup plus 1 tbsp EVOO
  • 1 cup bread crumbs
  • 3/4 to 1 cup fresh parmesan cheese
  • 1 tbsp parsley
  • 1/2 tsp dried basil or 1 tsp fresh
  • finely chopped garlic
  • salt and pepper

  1. Clean out the mushrooms, reserving the inner stuff.
  2. In 1 tbsp oil, cook the above until all water is gone.
  3. Cool off.
  4. Combine the crumbs, cheese, and spices with the above and stuff into the clean caps.
  5. Place under the broiler on high for just a couple of minutes max right before serving.
