This is such an easy cookie to make! You don't need to use your mixer because it works best if made by hand. Just make sure not to overmix!
- 10 Tbsp. unsalted butter (softened, 1 stick plus 2 tablespoons)
- 3/4 cup brown sugar (packed)
- 1/4 cup sugar (granulated)
- 1 large egg (room temperature)
- 1 1/2 tsp. vanilla
- 1 cup all-purpose flour (spooned and leveled)
- 2/3 cup natural cocoa
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 cups chocolate chips (semi-sweet or dark)
- Cream the butter until smooth.
- Add the brown sugar and white sugar and cream well.
- Add in the egg and mix.
- Add in the vanilla and mix.
- Whisk together the flour, cocoa, soda and salt and add in scoops to the wet, barely mixing.
- DO NOT OVER MIX!
- Fold in the chips.
- Bake at 350 for 8 minutes.
- Allow to set on the tray for 30 seconds before transferring to a rack to cool.
