Soft Batch Double Chocolate Cookies

This is such an easy cookie to make! You don't need to use your mixer because it works best if made by hand. Just make sure not to overmix!

  • 10 Tbsp. unsalted butter (softened, 1 stick plus 2 tablespoons)
  • 3/4 cup brown sugar (packed)
  • 1/4 cup sugar (granulated)
  • 1 large egg (room temperature)
  • 1 1/2 tsp. vanilla
  • 1 cup all-purpose flour (spooned and leveled)
  • 2/3 cup natural cocoa
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 cups chocolate chips (semi-sweet or dark)
  1. Cream the butter until smooth.
  2. Add the brown sugar and white sugar and cream well.
  3. Add in the egg and mix.
  4. Add in the vanilla and mix.
  5. Whisk together the flour, cocoa, soda and salt and add in scoops to the wet, barely mixing. 
  6. DO NOT OVER MIX!
  7. Fold in the chips.
  8. Bake at 350 for 8 minutes.
  9. Allow to set on the tray for 30 seconds before transferring to a rack to cool.
