Quick Oat Bread

Quick breads can be sweet or even savory but they originated as a way to use whole grains in a way that filled you up but didn't take a great deal of time to make. This recipe requires using Oat Flour, specifically flour made from oats. I use Old Fashioned rolled oats because they're easy to find and flour up quickly. You don't need to use a mill like you would with the steel cut or whole oats. Just pop them in your blender (I have a Vitamix- the best for this) and whiz away! In no time you have soft oat flour.

  • 2 3/4 cups oat flour
  • 1 cup warm milk (I use unsweetened almond milk)
  • 2 tbsp honey
  • 1/4 cup flax (unmilled)
  • 3/4 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/4 tsp salt
  • 2 eggs

  1. Preheat the oven to 350
  2. Whisk together the honey, eggs, milk and salt
  3. Add the baking soda and baking powder to the flour and mix
  4. Add the wet to the dry and stir in the ground flax
  5. Let the mixture stand for five minutes
  6. Line a bread pan with parchment paper (you will want to use a Glass or Corning baking pan).
  7. Cook for 40-45 minutes and then cool overnight before removing.
