Pineapple Fluff

Back in the day there were all kinds of easy-prep desserts, often used as side dishes for dinners or lunches or used as a weekday dessert. My family loves an occasional sweet after a meal or with one. I took the old version and slimified it!

for 8

  • 1 (1-ounce) package of sugar-free instant vanilla dry pudding mix
  • 1 (15-ounce) can of crushed pineapple with juice (not in syrup!)
  • 1 (12-ounce) container of reduced-fat whipped topping, thawed, divided
  • In a medium bowl, combine the pudding mix and pineapple with juice. 

  1. Fold in one-third whipped topping at a time and mix lightly.
  2. Pour mixture into 8 dessert dishes. 
  3. Refrigerate until pudding sets

NOTE: if you don't need to or want to do sugar free, don't! It works the same!
