The Great Depression was a time of gastronomic innovation. People had to "make do" a lot more than they do today. One of the foods considered a "relief" or special treat food was Peanut Butter Bread. A kind of quick bread, it uses less sugar than other quick bread recipes. You can make a healthy version of it by substituting whole milk for either nut milk or 1% milk (I wouldn't go lower) and lower-fat peanut butter. But just a tip- use creamy peanut butter in this, not crunchy. Mama and Dad went through this time of American history and she often shared stories about how they ate. Cabbage-butter bread sandwiches, lard and lettuce sandwiches, things like that went to school with them! Yuck!
- 2 cups flour
- pinch of salt
- 4 tsp baking powder
- 1 1/3 cup whole milk
- 1/4 cup sugar
- 1/2 cup peanut butter
- Mix the dry ingredients together.
- Whisk together the sugar, milk, and peanut butter
- Mix the wet and dry together very well
- Bake in a prepared loaf pan at 325 for 1 hour.
