Peanut Butter Bars to Love

This recipe makes 12 bars. So its not designed for a crowd. But you can make this and a few other bar types and turn small-batch bars into a bar of bars!

For the Crust

  • 1-1/2 cups crumbled graham crackers or digestive or any other cookie you may like
  • 2 tbsp sugar
  • 6 tbsp melted butter (more if need be)

  1. Blend and press into an 8x8" baking pan that has been lined with either a parchment sling or a thin foil sling.
  2. Bake at 350 for 10 minutes until it darkens in color slightly. 
  3. Remove from the oven, and cool on a rack to room temperature.

The Peanut Butter Fill

  • 5 tbsp softened, room-temperature butter
  • 1 cup creamy peanut butter (not "natural" style)
  • 1 tsp vanilla extract
  • 1 cup confectioner sugar
  • 1/3 cup heavy whipping cream

  1. Cream together the butter and peanut butter.
  2. Add the sugar, extract and whipping cream and whip on medium until it becomes very light and changes to a lighter color.
  3. Spread over the top of the crust and cover with plastic wrap in the fridge.

The Top

  • 6 oz semi-sweet chocolate
  • 1/3 cup heavy whipping cream,
  • 1 tbsp butter

  1. Heat the whipping cream on the stove to a simmer (bubbles)
  2. Pour over the chocolate and let it sit for 1 minute
  3. Whisk to smooth and add in the butter, whisking consistently until smooth and glossy.
  4. Pour over the peanut butter fill and cool; cover with plastic and let chill overnight.
