This recipe makes 12 bars. So its not designed for a crowd. But you can make this and a few other bar types and turn small-batch bars into a bar of bars!
For the Crust
- 1-1/2 cups crumbled graham crackers or digestive or any other cookie you may like
- 2 tbsp sugar
- 6 tbsp melted butter (more if need be)
- Blend and press into an 8x8" baking pan that has been lined with either a parchment sling or a thin foil sling.
- Bake at 350 for 10 minutes until it darkens in color slightly.
- Remove from the oven, and cool on a rack to room temperature.
The Peanut Butter Fill
- 5 tbsp softened, room-temperature butter
- 1 cup creamy peanut butter (not "natural" style)
- 1 tsp vanilla extract
- 1 cup confectioner sugar
- 1/3 cup heavy whipping cream
- Cream together the butter and peanut butter.
- Add the sugar, extract and whipping cream and whip on medium until it becomes very light and changes to a lighter color.
- Spread over the top of the crust and cover with plastic wrap in the fridge.
The Top
- 6 oz semi-sweet chocolate
- 1/3 cup heavy whipping cream,
- 1 tbsp butter
- Heat the whipping cream on the stove to a simmer (bubbles)
- Pour over the chocolate and let it sit for 1 minute
- Whisk to smooth and add in the butter, whisking consistently until smooth and glossy.
- Pour over the peanut butter fill and cool; cover with plastic and let chill overnight.
