No Bake Peanut Butter Bars

 Everyone loves peanut butter (except for those allergic to peanuts). But peanut butter bars are well above the ho-hum and a welcome weekday treat.

  • 1 cup salted butter, melted
  • 2 cups crushed graham crackers
  • 1/4 cup brown sugar
  • 1 3/4 cups powdered sugar
  • 1 cup + 4 tbsp peanut butter (chunky or other)
  • 1/2 tsp vanilla
  • 1 11oz bag of milk chocolate chips

  1. In a large bowl combine everything EXCEPT the chips and 4 tbsp of peanut butter.
  2. Beat until smooth and creamy.
  3. Line a 9x13 inch pan with wax paper and spread the mixture.
  4. Melt the chips in a bowl, stopping to stir as needed, at 50% power for 1-2 minutes at 30-second intervals.
  5. Once melted, stir in the 4 tbsp peanut butter and pour over the first layer, and spread around.
  6. Tap pan in the center to even out and chill in the fridge for at least 1 hour.
