
With melt in your mouth goodness, these plump little cookies are easy to make and fun to make as well! Get the kids involved! Just make sure they wash their hands first.
- 1 cup softened butter or white Crisco
- 2 cups powdered sugar (divided)
- 2 tsp vanilla extract (clear)
- 2 cups bleached white flour
- 1/2 tsp baking soda
- 1/8 tsp salt
- 2 cups finely chopped pecans
- Combine the shortening with 1 cup of the confectioners sugar and vanilla and beat until smooth.
- Sift together the flour, baking soda and salt and add to the above
- Fold in the nuts
- Shape into walnut-sized balls and bake at 350 for 10 minutes
- Allow to cool slightly and roll in powdered sugar
- Allow it to cool again and then roll it again.
