Garden Chicken Salad

 This serves four and its a very good salad spread!

  • 1 cup chopped cooked chicken breast
  • 1/4 cup reduced-fat mayonnaise
  • 1/2 cup sliced celery
  • 1/4 cup coarsely chopped red bell pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

  1. Combine all ingredients in food processor or blender, pulse until well blended. 
  2. Serve immediately or refrigerate until ready to serve.
