This breakfast is easy and tasty and very low cost! Its the kind of casserole you can serve for brunch as well.
- 6 eggs
- 1 cup cottage cheese (you may use salt-free CC, low fat or full-fat)
- 1 cup cheddar cheese, grated (may use reduced fat)
- 1/2 cup Parmesan cheese, grated
- 1/4 cup all-purpose flour
- 1/4 cup melted butter (or margarine or coconut oil)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup green onions, chopped
- Red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Preheat your oven to 350°F grease a baking dish.
- In a large bowl, whisk together the eggs until well combined.
- In a separate bowl, cream together the cottage cheese, cheddar cheese, Parmesan cheese, flour, melted butter, baking powder, and salt.
- Stir in the chopped green onions to elevate the taste.
- Pour the egg mixture into the prepared baking dish.
- Spread it evenly with a spatula.
- Transfer the dish to the preheated oven and bake for 35-40 minutes, or until the center is set and the top is golden.
- Allow the casserole to rest for a few minutes before slicing.
- Garnish with fresh parsley and, if desired, a sprinkle of red pepper flakes.
