Cottage Cheese and Eggs

 This breakfast is easy and tasty and very low cost! Its the kind of casserole you can serve for brunch as well.

  • 6 eggs
  • 1 cup cottage cheese (you may use salt-free CC, low fat or full-fat)
  • 1 cup cheddar cheese, grated (may use reduced fat)
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter (or margarine or coconut oil)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup green onions, chopped

  1. Red pepper flakes (optional)
  2. Fresh parsley, chopped (for garnish)
  3. Preheat your oven to 350°F grease a baking dish.
  4. In a large bowl, whisk together the eggs until well combined.
  5. In a separate bowl, cream together the cottage cheese, cheddar cheese, Parmesan cheese, flour, melted butter, baking powder, and salt.
  6. Stir in the chopped green onions to elevate the taste.
  7. Pour the egg mixture into the prepared baking dish.
  8. Spread it evenly with a spatula.
  9. Transfer the dish to the preheated oven and bake for 35-40 minutes, or until the center is set and the top is golden.
  10. Allow the casserole to rest for a few minutes before slicing.
  11. Garnish with fresh parsley and, if desired, a sprinkle of red pepper flakes.
