- 1 cup butter, softened
- 1 cup packed brown sugar
- 1⁄2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1⁄2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 3 cups old-fashioned oats
- 1⁄2 cup chopped dried apple
- In a large mixing bowl, cream butter and sugars.
- Beat in eggs and vanilla.
- Combine the flour, cinnamon and baking soda.
- Gradually add to creamed mixture and mix well.
- Fold in oat and apples.
- Drop by rounded tablespoons 2 inches apart onto ungreased baking sheets.
- Bake at 350°F for 10-12 minutes.
- Let stand for 1 minute before removing to wire racks.
