Cheese Biscuits

 MAKES SIX 2" BISCIUTS

  • 1/2 cup almond flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper (optional)
  • 3/4 cup reduced fat shredded sharp Cheddar cheese
  • 2 scallions, thinly sliced
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, lightly beaten

  1. Preheat oven to 350 degrees F. 
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, mix together the flours, baking soda, garlic powder, salt, and cayenne pepper. 
  4. Fold in the cheese, scallions, butter, and egg, mixing well until the mixture comes together into a dough.
  5. Use your hands to lightly knead the dough just once or twice, then divided it into 6 equal parts. 
  6. Shape each part into a ball, place on prepared baking sheet, and gently flatten slightly with your hand.
  7. Bake 20 minutes, or until puffed and golden. 
  8. Serve warm.
