Brother Jackies Nanner Puddin'

 Nanner Puddin- Mama didn't make Nanner puddin' cuz Mama didn't live in the south! But as soon as I
moved to Texas I learned to love this concoction! Now, I know there are many ways to make this lovely dish. And many involve intricate methods and a lot of heavy cooking. But who's to say that the more complex something is the better it must be?

Personally, I think simple is better and usually more successful. I got this recipe from a man named "Jackie". The little brother of five older sisters (I can't imagine!) Brother Jackie is a quiet, soft-spoken man whose claim to fame was bringing his famous Nanner Pudding to every single Dinner on the Grounds at the local country church we once attended. And it was always a big hit, too!

time, especially by my husband, who never failed to take a heaping spoonful whenever it was presented at the dessert table. By the way, if you don't have a "Nanner Dish" otherwise known as a trifle bowl, get thee one! You can get them on the cheap just about anywhere and you can even find them at flea markets, yard sales, and thrift stores if you don't have a WalMart or Target nearby. They do more than Nanner Puddin, they're great for any stacking, non-baked dessert as well as salads and large dips.

  • 2 cups whole milk 
  • 14 oz can of sweetened condensed milk
  • 1 package instant vanilla pudding
  • 2 cups chilled heavy whipping cream
  • 2 tbsp granular sugar
  • 1 tsp vanilla extract
  • 5-6 bananas (not too green- not too ripe!) sliced into 1/2" thick coins
  • 1 package Nilla wafers

  1. Mix together the two types of milk and whisk in the vanilla pudding.
  2. Whip the whipping cream to nice thick peaks and add in the sugar and vanilla at the very end.
  3. Add half of the whipping cream to the vanilla pudding mixture.
  4. Place 1 layer of wafers in the bottom and along the sides of the bottom of the Nanner dish.
  5. Pour in some of the pudding mixture and top with banana coins.
  6. Place more wafers vertically around the sides, pour in more pudding, and top with more bananas.
  7. Repeat layers until you reach the top.
  8. Top with whipped cream.

Now, you can add some changes to this if you like as well. Maybe put in some toasted coconuts or slip some shaved chocolate across the top. But for me? Just give me Brother Jackie's Nanner Puddin!her Jackies' 'Nanner Puddin'
