The breakfast sandwich is not a new thing and was enjoyed at diners with a side of pan-fried potatoes. But it didn't look like those frozen things you buy today and I bet it tasted 100% better. You need for each sandwich:
- 2 oz sausage patty (pork, turkey or chicken)
- 1 large egg (if you want to really go 50s, go MEDIUM egg!)
- 1 tbsp milk
- pinch of salt
- 1 tbsp each finely chopped onion and bell pepper
- 1/2 tbsp margarine or butter (or EVOO)
- 1 hamburger roll
- First, butter the inside of the roll and lightly toast it in a nonstick pan.
- Set aside.
- In the same pan add the onion and bell pepper and cook until soft.
- Mix together the egg and milk and scramble with the onion and bell pepper.
- Remove and sit aside.
- Press down the patty until very thin and cook in the same skillet.
- Assemble your sandwich and enjoy!
This is for one person and if you don't want the hamburger roll sub with 100 calorie multi grain English muffin!
