Bobs Red Mill Whole Wheat Muffins

  Bobs Red Mill is one of my favorite venues for flour and other baking goodies. This recipe makes some very good muffins and yes, you could add other things in but there's no reason to! 

  • 2 cups whole wheat flour
  • 1 cup sugar (or substitute equal)
  • 2 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 cup unsweetened shredded coconut
  • 3 large eggs
  • 1/2 cup vegetable or coconut oil (the liquid kind)
  • 1/2 cup applesauce
  • 2 tsp vanilla extract
  • 1 large apple, grated (around 1 cup)
  • 2 cups grated carrots
  • 8 oz can crushed pineapple, drained
  • 1 cup chopped walnuts (toasted)
  • 2 tbsp crystallized ginger (optional) chopped

  1. Preheat the oven to 350.
  2. Line a muffin pan with paper baking cups
  3. Whisk together the flour, sugar, baking soda, cinnamon, and salt.
  4. Add the coconut and stir to combine
  5. In another bowl whisk together the eggs, oil, applesauce, and vanilla.
  6. Add the apple, carrot, and pineapple and stir to combine.
  7. Add flour mixture and fold until just combined.
  8. Gently mix in the walnuts and ginger.
  9. Spoon the batter into baking cups, filling each totally.
  10. Bake for 25-30 minutes or until it passes the toothpick test

Makes 12 muffins
