- In this bell peppers replace the nacho chips
- 3 Chopped bell peppers
- 1 medium onion, chopped
- 3 Roma tomatoes, chopped
- 1 lb ground beef (93% lean) or turkey cooked and drained
- taco season of choice
- red mild enchilada sauce
- 1 cup shredded cheese
- Using a sprayed glass baking dish, layer in order from bottom up the peppers, onion. tomatoes, beef, enchilada sauce, and top with the cheese
- Bake on 350° for 25 minutes covered and uncover for the last 10 of those minutes
