Bell Pepper Nachos

  •  In this bell peppers replace the nacho chips
  • 3 Chopped bell peppers
  • 1 medium onion, chopped
  • 3 Roma tomatoes, chopped
  • 1 lb ground beef (93% lean) or turkey cooked and drained
  • taco season of choice
  • red mild enchilada sauce
  • 1 cup shredded cheese

  1. Using a sprayed glass baking dish, layer in order from bottom up the peppers, onion. tomatoes, beef, enchilada sauce, and top with the cheese
  2. Bake on 350° for 25 minutes covered and uncover for the last 10 of those minutes
