1934 Mock Apple Pie

  •  2 cups water
  • 2 cups sugar
  • 3 tbsp cream of tartar
  • 1 tsp lemon juice
  • 40 Ritz crackers (whole or crushed, if whole, layer)
  • 3 tbsp butter cut into small dots

  1. Bring the water, sugar and cream of tartar to a boil and reduce to medium for 20 minutes. 
  2. Add the lemon juice at the end and remove from heat once reduced and thickened
  3. In a prepared pastry crust, place the crackers and pour the thick liquid
  4. Now is when you could add in apple pie spice and top with the butter
  5. Cover with the top crust and bake at 425 for 10 minutes
  6. Reduce to 350 for 25-30 minutes more or until browned.
  7. Depending on the size of your pie plate, you will want to have something underneath to catch possible drippings.
  8. Let cool and serve.
