1934 Mock Apple Pie
- 2 cups water
- 2 cups sugar
- 3 tbsp cream of tartar
- 1 tsp lemon juice
- 40 Ritz crackers (whole or crushed, if whole, layer)
- 3 tbsp butter cut into small dots
- Bring the water, sugar and cream of tartar to a boil and reduce to medium for 20 minutes.
- Add the lemon juice at the end and remove from heat once reduced and thickened
- In a prepared pastry crust, place the crackers and pour the thick liquid
- Now is when you could add in apple pie spice and top with the butter
- Cover with the top crust and bake at 425 for 10 minutes
- Reduce to 350 for 25-30 minutes more or until browned.
- Depending on the size of your pie plate, you will want to have something underneath to catch possible drippings.
- Let cool and serve.
