STEAK STROGANOFF
- 1 lb round steak cut into 3/4" cubes
- 1/4 c flour
- 2 tbsp fat
- 1/2 c chopped onion
- 1 clove garlic, minced
- 1 6oz can broiled mushrooms in broth (or canned mushrooms)
- 1 c sour cream
- 1 can condensed cream of mushroom soup
- 1 tbsp Lea and Perrins
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 c cooked hot rice
- Roll meat in flour, brown in hot fat in a large frying pan
- Remove meat, add the garlic, onion and mushrooms and cook gently until the onions become golden
- Add remaining ingredients except for the rice and cook until thickened and bubbly
- Return the meat and simmer, stirring occasionally, for about an hour or so, until the meat is tender
- Serve over fluffy cooked rice
WELSH RABBIT WITH BEER
- 1 tbsp butter
- 1 1/2 lbs sharp cheddar cheese, diced
- 4 oz beer
- 1/4 tsp salt
- 1 egg, well beaten
- 1 tbsp lea& perrins
- toast
- Melt butter in a double boiler
- Add cheese and beer and allow the cheese to melt
- Stir in the salt, egg, and L&P
- Serve at once over the toast on heated plates
SHARP CHEDDAR CHEESE RAREBIT
- 1/2 lb old sharp crumbly cheese broken into small pieces
- 2 tbsp flour
- 1 tbsp lea&perrins
- 1/2 tsp dry mustard
- 2 cups of milk
- Melt the cheese over a double boiler
- Whisk in the flour and L&P
- Whisk in the milk and mustard
- Bubble low until thickened.
